Slow Cooker Boursin Chicken

Creamy slow cooker chicken made with garlic herb Boursin cheese, ranch seasoning, and pepperoncinis for a tender, flavorful dinner.

Ingredients
  

  • 2 lbs. Boneless Skinless Chicken Breast
  • ▢1 teaspoon Pepper
  • ▢1/4 to 1/2 teaspoon Salt
  • ▢1 ounce packet Ranch Dressing Powder Hidden Valley
  • ▢8 Pepperoncinis sliced
  • 1 5.3 ounce pkg. Garlic and Herb Boursin Cheese
  • ▢2 to 3 Tablespoons Butter optional

Method
 

Prepare the Slow Cooker
  1. Lightly grease the slow cooker with nonstick spray or a small drizzle of olive oil to prevent sticking.
Add the Chicken
  1. Place the chicken breasts in the bottom of the slow cooker. Sprinkle the ranch seasoning evenly over the chicken. Add black pepper and salt if needed.
Add the Pepperoncinis
  1. Top the chicken with sliced pepperoncini peppers. Drizzle 1–2 tablespoons of the pepperoncini juice over the chicken for extra flavor.
Add the Boursin Cheese
  1. Place the whole Boursin cheese on top of the chicken. If using butter, add small pats around the cheese for extra richness.
Cook
  1. Cover and cook until the chicken is tender:
  2. Low: 4½ to 5 hours
  3. High: 3 hours
  4. Cooking on low gives the most tender and juicy chicken.
Shred and Make the Sauce
  1. Remove the chicken and shred it using two forks. Stir the melted Boursin cheese and butter in the slow cooker until smooth and creamy. Return the shredded chicken and mix well to coat.
Finish and Serve
  1. Let the chicken warm in the sauce for 10–15 minutes before serving. Garnish with extra pepperoncini slices or chopped parsley if desired.
