Prepare the Marinade
- In a medium bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper. Stir well until everything is evenly mixed. If you are using Greek yogurt and honey, add them at this stage and whisk until the marinade becomes smooth and well blended.
Marinate the Chicken
- Use a fork to gently pierce the chicken breasts all over. This step helps the marinade soak deeper into the meat. Place the chicken in a large Ziploc bag and pour the prepared marinade over it. Seal the bag and move the chicken around so it is fully coated.
- Let the chicken marinate for at least 60 minutes, but for the best flavor and tenderness, allow it to marinate for 4–5 hours.
Grill the Chicken
- Preheat your grill to medium heat. Lightly brush the grill grates with oil to help prevent sticking. Place the marinated chicken on the grill and cook for about 5–6 minutes per side, depending on the thickness of the chicken breasts.
- The chicken is fully cooked when the internal temperature reaches 165°F. Using a meat thermometer helps ensure accurate cooking.
Rest and Serve
- Remove the chicken from the grill and allow it to rest for 5–10 minutes. This helps the juices stay inside the meat, keeping the chicken moist and tender. Before serving, drizzle with a little extra-virgin olive oil and slice if desired.
Notes
Chicken can be breast, thighs, tenders, or thinly sliced breast. Fresh lemon juice gives the best flavor. Marinate for at least 60 minutes but 4–5 hours is ideal.
