Ingredients
  

For the chocolate blend:
  • 2 tsp vanilla essence use pure vanilla extract for best flavor
  • 12 oz semi-sweet chocolate chips or dark chocolate for less sweetness
  • 1/2 cup unsalted butter I like Kerrygold unsalted butter for this
  • 1/2 cup cocoa powder
For the wet ingredients:
  • 1/2 cup sourdough starter discard active or unfed starter works well here
  • 1/2 cup packed brown sugar
  • 1 cup white sugar
  • 1 egg yolk adds richness and chewiness to the brownies
  • 2 large eggs
For the dry ingredients:
  • 1 cup plain flour
  • 1 tsp salt

Method
 

  1. Step 1: Prepare the Oven
  2. Preheat oven to 350°F (176°C).
  3. Line a 9×9-inch baking dish with parchment paper.
  4. Step 2: Melt the Chocolate Mixture
  5. Melt butter over low heat.
  6. Add chocolate chips, cocoa powder, and vanilla.
  7. Stir until smooth, then let it cool slightly.
  8. Step 3: Make the Batter
  9. In a large bowl:
  10. Beat eggs, egg yolk, and sugars for 7–10 minutes until light and creamy
  11. Mix in sourdough discard and melted chocolate
  12. Fold in flour and salt gently
  13. The batter will be thick.
  14. Step 4: Bake
  15. Pour batter into the pan and smooth the top.
  16. Bake for 35–40 minutes until a toothpick shows moist crumbs.
  17. Step 5: Cool & Serve
  18. Let brownies cool completely.
  19. Lift using parchment paper, slice, and serve.

Notes

  • Bake less for fudgy texture, longer for cakey
  • Can use active or discard starter
  • Add mix-ins like nuts or chocolate chips if desired
