Ingredients
Method
Step 1: Sauté the Vegetables
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook for about 5–7 minutes until soft.
- Stir in the garlic and cook until fragrant.
Step 2: Add the Spices
- Mix in the cumin, paprika, coriander, and cayenne pepper.
- Cooking the spices in oil for a short time helps release their rich flavor.
Step 3: Make the Tomato Sauce
- Pour in the crushed tomatoes and season with salt and black pepper.
- Let the sauce simmer for 10–15 minutes until slightly thickened and rich in flavor.
Step 4: Add the Eggs
- Use a spoon to make 5 small wells in the sauce. Carefully crack one egg into each well.
Step 5: Cover and Cook
- Reduce the heat to low and cover the skillet.
- Cook for 6–8 minutes until the egg whites are set while the yolks stay soft and runny.
Step 6: Garnish and Serve
- Top with fresh parsley or cilantro and sprinkle feta cheese on top if desired.
- Serve hot with warm pita bread or crusty bread.
Notes
- Use medium-low heat when cooking the eggs for soft yolks.
- Crushed tomatoes create the best rich and smooth sauce texture.
- Add feta cheese for extra creaminess and flavor.
- Serve immediately with warm bread for the best experience.
- Adjust cayenne pepper based on your spice preference.
