Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 1 red bell pepper diced
  • 4 garlic cloves minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper optional
  • 2 cans 400g each crushed tomatoes
  • Salt and black pepper to taste
  • 5 large eggs
  • Fresh parsley or cilantro chopped
  • Feta cheese crumbled (optional)
  • Warm pita bread or crusty bread for serving

Method
 

Step 1: Sauté the Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook for about 5–7 minutes until soft.
  2. Stir in the garlic and cook until fragrant.
Step 2: Add the Spices
  1. Mix in the cumin, paprika, coriander, and cayenne pepper.
  2. Cooking the spices in oil for a short time helps release their rich flavor.
Step 3: Make the Tomato Sauce
  1. Pour in the crushed tomatoes and season with salt and black pepper.
  2. Let the sauce simmer for 10–15 minutes until slightly thickened and rich in flavor.
Step 4: Add the Eggs
  1. Use a spoon to make 5 small wells in the sauce. Carefully crack one egg into each well.
Step 5: Cover and Cook
  1. Reduce the heat to low and cover the skillet.
  2. Cook for 6–8 minutes until the egg whites are set while the yolks stay soft and runny.
Step 6: Garnish and Serve
  1. Top with fresh parsley or cilantro and sprinkle feta cheese on top if desired.
  2. Serve hot with warm pita bread or crusty bread.

  • Use medium-low heat when cooking the eggs for soft yolks.
