Ingredients
  

  • 4 Boneless Skinless Chicken Breasts or thighs
  • Salt and Pepper generously sprinkle on chicken
  • 1 cup Chicken Broth
  • 1/2 cup Sundried Tomatoes jarred in oil
  • 1 cup Heavy Cream
  • 3 Garlic Cloves minced
  • 1 teaspoon Thyme or Oregano
  • 1/2 to 1 teaspoon Red Pepper Flakes
  • 1/2 cup Parmesan Cheese freshly grated
  • 1 Tablespoon Cornstarch
  • 8 fresh Basil Leaves cut into ribbons

Method
 

Optional: Sear the Chicken
  1. Searing the chicken before slow cooking is optional but highly recommended for deeper flavor. It gives the chicken a light golden crust and helps keep it juicy while cooking.
  2. Heat 1–2 tablespoons of oil in a skillet over medium-high heat. Place the chicken breasts in the pan and sear for about 2–3 minutes per side, just until lightly browned. You don’t need to cook them fully at this stage. Transfer the seared chicken to the slow cooker.
Prepare the Creamy Sauce
  1. In a medium bowl, whisk together:
  2. Chicken broth
  3. Heavy cream
  4. Sun-dried tomatoes
  5. Minced garlic
  6. Thyme or oregano
  7. Red pepper flakes (if using)
  8. Cornstarch
  9. Mix until smooth and well combined. Pour this creamy mixture evenly over the chicken in the slow cooker.
Slow Cook Until Tender
  1. Cover the slow cooker with the lid and cook on the LOW setting for 5–6 hours, or until the chicken is fully cooked and tender.
  2. Avoid lifting the lid during cooking, as this releases heat and can extend the cooking time.
Optional: Blend the Sauce for Extra Creaminess
  1. If you prefer a smoother sauce, remove the cooked chicken and set it aside. Use an immersion blender to blend the sauce directly in the slow cooker until creamy. You can also transfer the sauce carefully to a blender.
  2. Return the chicken to the slow cooker and coat it well with the blended sauce.
Add Parmesan and Finish
  1. Stir in the Parmesan cheese and allow the sauce to cook for another 5 minutes until slightly thickened and creamy.
  2. Garnish with fresh basil and extra Parmesan before serving. Taste the sauce and adjust with additional salt and pepper if needed.

Notes

  • Searing chicken is optional but adds flavor.
  • Store leftovers in refrigerator for 3–5 days.
  • Freeze up to 3 months.
